Also, this is the time of season for outdoor receptions and family gatherings here at the Inn. Summer is a busy time of year. You can take a chair-lift to the top of Mt. Sunapee for a breathtaking view. A leisurely cruise on the lake on the MV Mt. Sunapee or do your own boating on the lake. Pack a picnic and head to Sunapee State Park for a swim. After a full day of activities, a peaceful evening may be just what you need.

Three quintessential New Hampshire inns - Rosewood Country Inn, The Candlelite Inn and Henniker House Bed & Breakfast are offering a weekend getaway amidst a backdrop that's right out of a Currier & Ives scene. The two night package includes a mapped, self-guided tour of neighboring sugar houses where guests can see maple syrup made the old-fashioned way, and learn the history of the time honored tradition from the Native Americans to the present. The guide also includes suggestions for antiquing and tax-free shopping, and areas for snow shoeing and cross country skiing. After a day of t ouring, guests can treat themselves to a romantic sleigh ride over the river and through the woods at the Rosewood Country Inn (optional spring sleigh rides are weather dependent and $25 per person. The three-course Progressive Dinner starts with hors d'oeuvres at the Henniker House overlooking the Contoocook River, entrees served fireside at the Rosewood Country Inn, and ends with desserts at the cozy Candlelite Inn.

For a sneak peak at some of the delectable maple offerings on the menu, Henniker House shares their recipe for Ginger Cashew Granola where maple syrup brings a gentle sweetness to this zippy breakfast cereal.

Preheat oven to 275 degrees

Spray a 9 by 13 inch metal pan with cooking spray

Mix together in a large bowl

2 c old fashioned oats
1/2 c wheat germ
2 Tbsp brown sugar
1/4 tsp salt
1/4 c flaked coconut
1/4 c chopped roasted unsalted cashews
1/4 c sunflower seeds

In a Microwave safe cup, measure out

1/4 c maple syrup
3 Tbsp flavorless oil such as vegetable or canola
1 Tbsp water

Heat to a boil in microwave. Pour wet ingredients over dry and stir thoroughly. Put in pan -form into clumps if you want. Bake for 30 minutes, stirring after 15 minutes. Add 2/3 cups dried candied ginger. Bake another 15 minutes until golden brown. Let cool, put in airtight container. Keeps about 2 weeks.

snow, skiing and apres ski - all fine here in Henniker

For those of you who have been in our breakfast room, you've seen the sign over the door that says "it's all about skiing" and the last 7 days has really put life in that phrase. Yesterday's storm insures that will continue.

On January 12th Henniker got 20 inches of beautiful fluffy stuff. Pats Peak (www.patspeak.com) did a fine job of grooming that and a capacity crowd at Henniker House for the long weekend reported great skiing. Phil & I basked the guest dynamic in the solarium on Saturday evening with hot chocolate, returning guests sharing their insight with newbies and parents enjoying a comfy chair while tuckered out kids crashed upstairs.

Yesterday another 10 inches fell and I skied a double black I'd never ventured on before. Yes, there was a little rain at the end of the storm but that's been taken care of and all trails are groomed and open. Well, Hurricane isn't groomed and that wasn't the double black I tried out.

We still have availability for this weekend if you'd like to come and see for yourself, we'd love to share it with you because "it's all about skiing".

Chilled Peach and Cantaloupe Soup
1 fresh ripe cantaloupe, cubed and cut into chunks
2 ripe peaches, peeled and cut into chunks
1 teaspoon almond extract
2 teaspoons amaretto liqueur
2 teaspoons lemon juice
2 cups half and half

Blend, small amounts at a time, fruits and liquids in blender or food processor. Chill. Serve in stemmed glasses with a dollop of whipped cream and a dash of nutmeg.

Cooking up a Storm: Recipe and Cookbook Writing — March 13-17, 2011 This event will be a real treat—literally! In this unique cooking and writing workshop, participants will learn how to translate favorite meals into accurate recipes, how to create a menu centered around a theme, how to develop new recipes and how to tell the story behind the dish. Guests don’t have to be chefs or writers to participate. Anyone interested in cooking or writing about cooking is welcome.

Back to being busy here at the Trumbull House B&B in Hanover, NH after a one-night lull! A couple of rooms are available on Friday, but nothing on Saturday and only one on Sunday. Dartmouth College is back in its summer session (sophomores are required to attend the summer session) so there is plenty to do on campus. This morning our most popular entree was Buttermilk Pancakes and the Sour Cream/Coconut/Blueberry muffins were a big hit. Last week there was one morning when seven out of the ten people eating ordered Tomato, Basil & Brie Omelets! I would have blogged about it then, but had too much else going on!
